Two questions (before I commit): 1. Commercial variant I could try (never had a bretted saison)? 2. Does adding Brett really “ruin” my equipment – i.e. do I have to have a dedicated set of fermentation / bottling equipment for bretted vs. traditional brews?
I can’t really help with your first question. As for needing separate equipment to do a Brett ferment, for this project you might not need to personally do a Brett ferment. I assumed that all of us (except one Brett brewer) would ferment with a regular sacc saison strain and one person would ferment with Brett. We would combine all in the barrel and let the Brett do its thing for the next 9-12 months.
Holler at Kevin Patterson at Beer Trappe…I am thinking they will have at least a couple to suggest.
Barrel aging time is TBD. We may find that the brett does its thing in 2-3 months, particularly with it being added in the heat of the summer.
We do want to do this barrel completely full. Brewing a saison helps us out in this matter, as the gravity is fairly low, so people can make larger batches (Compared to a quad, barleywine, etc.).
any of the fantome saisons, orval has heavy brett character and could give you an idea, boulevard saison brett may be around still. blackberry farms makes a brett saison. Main thing is figuring out if you like the brett character. Orval would be a great one to try.
